Caprese Skewers

by Melissa on May 27, 2008

These little appetizers are so easy to put together, but they look and taste fabulous! I love the combination of the fresh mozzarella, basil and tomato. There really is no recipe for these, and there are many ways to make them. I like the skewers, but you could use a large tomato and layer with fresh sliced mozzarella and basil on a platter. Another option is chopping the tomatoes, mozzarella and basil and combining them in a salad.

Caprese Skewers

  • Package of cherry or grape tomatoes
  • Package of bite-sized mozzarella balls
  • Fresh basil leaves, cut in half length-wise
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper
  • Toothpicks or skewers

On each skewer, place mozzarella, basil, and a tomato. Arrange on a serving plate. Drizzle with olive oil, balsamic vinegar and sprinkle with salt and pepper.
