This weeks Barefoot Bloggers recipe is another one of those Ina recipe’s that I would have never made on my own. Chosen by Ashley, over at The Spicy Skillet, this smoked salmon spread comes from Barefoot Contessa Family Style. I have never had smoked salmon before, while I do like salmon, smoked salmon just never really appealed to me. I was debating making this with crab, as some of the of Barefoot Bloggers had mentioned doing, but in the end, decided to try the salmon. I was actually surprised that the smoked salmon I used didn’t really have a strong flavor, it didn’t really even taste like salmon. They only had one brand in my store and honestly it didn’t seem like very high-quality salmon. I decided to try this on some mini-bagels I bought and it was good, I think it might be better tomorrow though, when the flavors have melded a bit.
Oh, and I’m sorry this is a day late, I was planning on stopping by work on my way home yesterday to get the ingredients and make it. However, we had some crazy weather in New Hampshire (tornados, yikes!) so I came straight home and didn’t go to the store until today. There was a lot of damage in surrounding communities, but luckily we, as well as our friends and family, are all ok. We are definitely thinking about those who lost there homes and who were injured.
Smoked Salmon Spread
- 8 ounces cream cheese, at room temperature
- 1/2 cup sour cream
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon minced fresh dill (I used dried)
- 1 teaspoon prepared horseradish, drained (omitted)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 pound (4 ounces) smoked salmon, minced
Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt, and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites or crackers. If you can find it, I prefer Norwegian salmon; it’s drier and less salty than other smoked salmon.
