I love broccoli and cheese together, but I had never had polenta before. This recipe, from Ally’s blog, looked so creamy and delicious. It was the perfect recipe to try my hand at polenta with. I wasn’t really sure how the polenta would come out, but it was perfect! I mostly tasted the broccoli and cheese, with the mild flavor of the cornmeal. We were going to have the polenta with baked chicken breasts, but it was to hot to use the oven. Instead we had grilled hamburgers with caramelized onions.
Broccoli and Cheese Polenta
- 1 cup corn meal
- 3 cups chicken broth (fat free, low sodium)
- 1 box frozen broccoli thawed (I thawed in the microwave)
- 1 tsp butter
- 2 tsp. olive oil
- 1/4 cup 2 % shredded mozzarella (I used cheddar)
- 2 Tbs. grated Parmesan
- salt and pepper
Heat a medium sized sauce pan over medium heat. Add chicken broth and let it come to a boil. In a steady stream, add the polenta whisking the entire time. Keep whisking until smooth. Let cook about 15 minutes and add the rest of the ingredients and stir to combine. Cook about 5-8 minutes longer and serve.
