I love broccoli, but Nate does not really care for it. So when I really wanted to have broccoli with the Chicken Parmigiana Rolls I was making for dinner, I asked him if there was anything I could do to make it more appetizing to him. His answer “What about some sort of sauce….maybe a garlic butter sauce.” OK, I will give it a try. I was looking for a sauce that was not completely loaded with butter and cream when I found this one at Recipezaar. I did decrease the butter though and served it over steamed broccoli. I wouldn’t say that Nate loved this, but he did eat a good portion of it, so I would call that a success.
Broccoli with Garlic Butter Sauce
- 2 heads of broccoli florets, chopped
- 2 tablespoons chopped garlic
- 1 cup chicken broth
- 1/2 pound butter (2 sticks), cold and cubed (I used 6 tablespoons)
- 2 tablespoons parsley
Steam broccoli until crisp-tender, do not overcook!
In a small saucepan, over medium heat, combine the garlic and broth. Bring to a boil and reduce by half. Whisk in the butter, 1 cube at a time, until all of the butter is incorporated and the sauce coats the back of a spoon. Add the parsley and mix well.

Adam doesn’t like broccoli either but I love it and he is willing to try, I will have to try this recipe.
