Not quite mini bacon-lettuce-tomato sandwiches, but even better! Cherry tomatoes stuffed with a creamy bacon filling and served on a bed of lettuce. These were a huge hit at my sister’s bridal shower!

Baby BLT’s
- 1/2 pound bacon, cooked and crumbled
- 1/4 cup light mayonnaise
- 3 oz. light cream cheese, softened
- 1/4 cup green onions, chopped
- 1 tablespoon fresh parsley, chopped
- lettuce, for serving
- 24 cherry tomatoes
In a small bowl mix together mayonnaise and cream cheese until well blended. Stir in crumbled bacon, green onions and parsley. Cut a small slice off the bottoms of the tomatoes (this will prevent the tomatoes from rolling around so much). Using a 1/4 teaspoon, scoop out the inside of the tomatoes. Fill each tomato with the bacon mixture and refrigerate for 1 hour. Serve on lettuce leaves.

Nice appetizer, but takes too much time/effort to make. Tried it with tuna instead of bacon, works just fine.
I am glad the tuna worked out for you. Unfortunately, I don’t really like tuna, so the time to cook the bacon it well worth it for me! I am sure some good, quality bacon bits would also work well.
