I am not a huge fan of roasted potatoes, but my husband really likes them, so I make them from time to time. When I saw this recipe, I loved how the potatoes looked so seasoned and flavorful and added it to our menu for the week. I am so glad I did, because these were delicious! I think that the mayonnaise helps the garlic and seasoning stick to the potatoes resulting in a flavorful, crispy crust.

Roasted Aioli Potatoes
- 6 new potatoes
- 2 tablespoons of olive oil
- 1 tablespoon of light mayo
- 2 cloves of garlic, pressed
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Preheat oven to 375 degrees. Cut the potatoes into halves or quarters, depending on the size. Combine olive oil, mayo, garlic and seasonings in a medium bowl. Add potatoes and toss with the mayonnaise mixture, coat well. Roast the potatoes on a cookie sheet for 30-40 minutes, or until golden brown.
