I love this sugar cookie recipe, but when I decided to bake some cookies for Mother’s Day, I wanted to try a new recipe. I have seen this recipe on several blogs with rave reviews, so I decided to give it a try. I am so glad I did! These cookies were delicious. The addition of lemon zest and almond extract adds a fabulous flavor, and the cookies were sturdy enough to make cookie pops with. I even shipped some of them 600 miles to my mom, and I am told that they were perfect upon arrival. I decorated the cookies with Royal Icing and I would highly recommend them next time you are looking for an extra special sugar cookie!

Ashlee’s Famous Sugar Cookies

1 1/2 cups butter

1 1/2 cups granulated sugar

1/2 cup powdered sugar

4 eggs

1 tsp. vanilla

1/2 tsp. almond extract

1 tbsp. lemon zest

5 cups flour

2 tsp. baking powder

1 tsp. salt

Powdered sugar, for rolling
Preheat oven to 400 degrees.
Cream butter and sugars in a mixer for 5 minutes. Add in eggs one at a time, mixing thoroughly. Add in vanilla, almond, and lemon zest. Beat for 10 seconds.

I used that recipe to make cookies for Mother’s Day too, and I agree they are delicious!

Your cookies look great. I’m always concerned about shipping cookies because they get broken and then you just have cookie crumbs but glad to hear yours made it in 1 piece.
