Bruschetta Turkey Burgers

 I have a back log of posts that really should be addressed, but after making these turkey burgers for dinner tonight, I couldn’t wait to share! We eat a lot of turkey burgers around here, and I can honestly say that this was one of the best turkey burgers I have ever eaten. Fresh tomato bruschetta piled high on a juicy, grilled turkey burger topped with gooey mozzarella, yum! With summer slowly starting to fade away and fall just around the corner, you need to add these to your menu soon!

Bruschetta Turkey Burgers

Bruschetta:

  • 1 pint of grape or cherry tomatoes, halved
  • 5-6 sun-dried tomatoes packed in oil, drained and chopped
  • 1 large or 2 small cloves of garlic, finely minced
  • 2 tablespoons basil (8-10 leaves, chiffonade)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • dash ground black pepper

Turkey Burgers:

  • 1.25 lb package of ground turkey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon balsamic vinegar
  • 4 oz of fresh mozzarella or 1/4 cup shredded mozzarella
  • 4 hamburger buns

Preheat the grill to medium heat. Combine the bruschetta ingredients in a medium bowl and set aside while you assemble and cook the burgers.

Combine the ground turkey, spices and vinegar. Shape in to 4 patties. Cook the patties on the grill until turkey is browned and cooked through, about 4-6 minutes per side. Top with mozzarella cheese and leave on the grill until the mozzarella melts.  Toast the hamburger buns on the grill.

Top the turkey burgers with the bruschetta and serve. They will be a bit messy to eat, but so good!

Love the idea of making it with turkey burgers! Mmmmm… I need to get into my new house so I can start grilling and make these again!!! :)
