Caramelized Green Beans with Pine Nuts

I don’t know about you, but I am always looking for new side dish ideas. This recipe is a great way to take fresh green beans and kick them up a bit. Instead of simply steaming or boiling them, the green beans are caramelized with garlic and mixed with buttery pine nuts. These do take a bit longer to prepare, as you need to allow time for the green beans to caramelize, but to me, the taste is worth it.  

Caramelized Green Beans with Pine Nuts

  • 3/4 tablespoon butter
  • 3/4 tablespoon olive oil
  • 1 1/2 pounds green beans, stem ends removed
  • 2 cloves of garlic, minced
  • 2 tablespoons pine nuts
  • Coarse salt and ground pepper
In a large skillet, heat butter and oil over medium-low heat. Add green beans and garlic and stir to combine. Partially cover the skillet and cook, tossing occasionally.The green beans are done when they are tender and browned in spots, after about 30 minutes. Add pine nuts. Cook until nuts are toasted, about 5 minutes. Season with salt and pepper to taste.

Those look so good! I rarely make green beans because they are hard to liven up but this looks perfect!

Yum, these do sound like an awesome side dish! I love caramelized anything, especially when pine nuts are involved :)
