Creamy Taco Mac

With the busy holiday season rapidly approaching, I am on the lookout for quick and easy weeknight meals. This Creamy Taco Mac definitely fits the bill. Ground turkey, pasta and tomatoes in a slightly spicy and creamy cheese sauce. This pasta is very similar to Hamburger Helper and is just as easy to make, but it tastes better and is definitely better for you!

Creamy Taco Mac

  • 8 oz dry pasta + 1 cup reserved pasta water
  • 1.25 lbs ground turkey
  • 1 clove of garlic, minced
  • 1 can (14.5 oz) petite diced tomatoes
  • 4 Tbsp mild taco seasoning (1 packet)
  • 4 oz cream cheese (reduced fat is fine)
  • 1/2 cup sour cream (reduced fat is fine)
  • salt & pepper
  • cheddar cheese, shredded

Bring a large pot of salted water to boil and cook pasta per directions. Reserve one cup of pasta water.

Meanwhile, over medium heat, brown ground turkey until no longer pink. Add minced garlic and sauté until fragrant, about 30 seconds. Stir in taco seasoning and diced tomatoes. Allow to simmer over low heat for 5 minutes. Add cooked pasta, cream cheese, sour cream and 1/2 cup pasta water. Give it a good stir until cream cheese is melted and incorporated. Add additional reserved pasta water to thin out the sauce, if necessary. Simmer over low heat for 2-3 minutes. Season with salt & pepper to taste. Top with cheddar cheese.
