We celebrated my daughter’s 4th birthday this past weekend, and although I have a backlog of recipes to post, I had to share these delicious pizza bites that I made with you! I chose to make these for a couple of reasons, the first being that I have seen them on several of my favorite blogs with everyone raving about how good they are. The second is that they are also very easy to make, and can be made ahead of time, which is a must when having a party!
Small balls of pizza dough are filled with pepperoni, or in my case pepperoni and sausage, and mozzarella and baked until golden brown. Then you dip them in warm marinara sauce or ranch dressing (I know I am not the only one that does this!). I made two pans of these for the party, and probably should have made three, they were gone in no time! Like I said, I made traditional pepperoni, and a batch of sausage for my weird little girl who loves sausage, but you could really make these with any filling that you like!
- Pizza dough, your favorite homemade recipe or store-bought, enough for 1 pizza
- 4 oz. mozzarella cheese, cubed (about 20-24 pieces)
- Sliced pepperoni, or crumbled cooked sausage, or whatever other filling you like!
- Olive oil
- Italian seasoning
- Grated Parmesan cheese
- Warm marinara sauce, or ranch dressing for dipping
Preheat the oven to 400˚ F. Lightly grease a 9-inch pie plate or cake pan. Divide the pizza dough into 20-24 roughly equal sized pieces. Take one of the dough pieces, top with a cube of cheese and a slice or two of pepperoni. Pull the edges of the dough around the fillings and pinch closed. Place seam-side down in the baking dish. Repeat with the remaining dough pieces.
Lightly brush the tops of the dough balls with olive oil. Sprinkle with Italian seasoning and grated Parmesan cheese. Bake for 20 minutes, or until the tops are golden brown. Serve warm, with dipping sauce as desired.
